The Olive groves

The Fabiani winery‘s olive groves (one hectar) are located in the countryside near Cinigiano. The groves consist of the traditional Tuscan mix of cultivars. Among our 200 trees the most common varietals are Leccino, Moraiolo, Frantoiano and Olivastra. Each of these cultivars adds a specific flavour and quality to our EVOO.

All work in the grove – e.g. the pruning of the trees – is carried out by hand and the soil is fertilized with organic fertilizers only.
