The production

Production stages

We dedicate utmost attention to each production step. The same diligent approach used to look after our vines and vineyards is continued during the wine making process.

The grapes are handpicked and their evolution is carefully monitored in the cellar to guarantee a natural wine with unique qualities.

Fermentation and aging of wines

No yeasts are added during the natural fermentation of the Fabiani wines. The Giano red wine ages in wood (big barrels from Slavonia and tonneaux on their second or third passage) for circa ten months. Four months of aging and stabilising in the bottle before release of the wine. Fontenasso – our white wine – ages for four months in stainless steel tanks and for another four months in the bottle.
